Blueberry Pie

I also made a blueberry pie this week. I found a local farmer's market and stocked up on fruits and veggies...I made it with a crumble topping because that is Mark's favorite!

I got some fresh corn on the cob, we enjoyed it as well as Bailey!

New Recipes

I tried this new recipe this week...I used pizza dough because it was on sale this week. It was yummy!

Taco Pizza
Ingredients
8 ounces lean ground beef and/or bulk pork sausage
3?4 cup chopped sweet pepper (1 medium)
1 11.5-ounce package (8) refrigerated corn bread twists
1?2 cup bottled salsa
3 cups shredded taco cheese (12 ounces)
Crushed tortilla chips (optional)
Dairy sour cream (optional)
Chopped tomato (optional)
Sliced green onion (optional)

Preparation
Preheat oven to 400°F. Grease a 12-inch pizza pan; set aside. In a medium skillet cook ground beef and sweet pepper over medium-high heat until meat is brown. Drain off fat.

Unroll corn bread dough (do not separate into strips). Press dough onto the bottom and up the sides of the prepared pizza pan. Spread salsa over dough. Sprinkle with meat mixture and cheese.

Bake about 20 minutes or until bottom of crust is golden brown when lifted slightly with a spatula. If desired, top with tortilla chips, sour cream, tomato, and green onion. Cut into wedges.

House Updates

Our house has come a long way...it is starting to feel like home! Mark's parents bought new furniture for their house so we got some of their old furniture. Here are some updates! We added the two chairs in the family room. We got a sofa table for the entry way. Also, two hutches so we could put away our china and barware from sterling cut glass. It looks so pretty! Now we just need a dining room table!

My Adorable Nephews

We spent some quality time the past two weekends with my nephews Alex and Evan. One weekend in Indy for Matt's 30th birthday and then in Cincinnati for Alex's 2nd birthday. We got Alex a super soaker, which was Uncle Mark's idea. Mary-beth and I also went in on a sleeping bag for Alex. As for Evan, he just sits, smiles and cuddles!

We ate dinner at this beautiful restaurant overlooking the entire island.
